It needs to mix for about 5 minutes on medium speed until the dough is soft and elastic. Yes you can do the first rise in the fridge overnight. Just cover the bowl tightly with plastic wrap. I actually used a stand mixer to knead and I kneaded until it passed the window pane test which took about 10 minutes using both medium low and medium speed. I also noticed that you stated 1oz. if butter is equal to 1.5 tablespoons butter. Shouldn’t that be 2 tablespoons since a 4 oz. stick is 8 tablespoons? As I read through the next instructions, I see that you say to test for doubling by making sure a two finger indention does not remain. Isn’t that backwards. I have always been taught it is doubled when the indention remains. Is there an error there?
