The rice and spinach filling was so flavorful, especially with the fresh lemon juice and parsley stirred in at the end. I let the filling cool down completely as instructed, and it really helped the pastry stay crisp and not get soggy on the bottom. The parcels baked up beautifully golden brown, and the salmon was perfectly cooked and flaky inside. This is a brilliant way to serve salmon – it felt like a restaurant-quality meal!

This was FABULOUS! My husband and I have been working to incorporeal Mediterranean items into our regular diet. This was spot on. Very flavorful and easy to put together. I served it with a pasta salad on the side using oil and vinegrette. Delicious! We will certainly make it again.
