Substituted grated provolone for the parmesan (grabbed the wrong cheese at the market). Well, it turned out great and I think the milder cheese allowed the lobster to stand out even more.

I made these for one chef and one wealthy restaurant patron who loves lobster. I was nervous, of course, and they came out fantastic. The sauce was a wonder…just the right amount of flavor with no one item stealing the other items thunder. Thank you so much for this wonderful recipe. It and I were a hit. Will be made many more times over.
