Hi Rachel, The easiest way is to make it as is and divide it into 4 portions, place it in an airtight container and freeze or refrigerate what you don’t use, or you can half the recipe. Use chicken breast to keep the fat low, no skin, skip the salt and olives. Use extra herbs and lemon for the kick. Enjoy! Xx
