Hi Phil, Spatchcocking cuts the cook time almost in half! Because the bird lays flat and exposes everything to the heat evenly, a 4-pound chicken at 430°F (220°C) only needs 40 to 45 minutes instead of the usual 1 hour and 20 minutes. Enjoy Xx

Loved it. My bird was a 5lb organic. I used Ghee for the melted butter and added another 18 minutes to cooking time and it came out perfect. Who doesn’t love crispy chicken skins, and this was great!
