I made these enchiladas tonight and they were absolutely incredible! I decided to make my own salsa verde to go with it, and it was a total game-changer.

I just broiled some tomatillos, an onion, and a couple of jalapeños until they got a nice char, then blended them with garlic, cilantro, and a squeeze of lime. The smoky flavor from the roasted veggies made the enchiladas taste so much more authentic and delicious. If you have the extra time, I highly recommend making your own roasted salsa verde for this recipe. It takes it to the next level!
