This is so yummy, it does take about an hour of simmering though to get the right consistency. Rice pudding (in my experience) is almost always a slow recipe taking 45-60 minutes – this recipe in particular is the most yummy I’ve ever had tho

Hi Judie, yes, it will thicken as it cools. Rice pudding continues to absorb liquid and the starches set as it cools, making it creamier and thicker. Enjoy cooking Xx
