I hate pounding chicken breasts!!!
Before I went keto I would make my own tortillas using a press.
Now it’s easier to buy lo-carb wraps.
But my press isn’t gathering dust,
I use it to flatten chicken breasts.
Have a great recipe from another
blogger for rolled up chicken.
Take your flat breast and layer with
just about anything. Ham, cream cheese,
turkey lunch meat, etc. Tie up and bake.
These Cajun Breasts are delish,
they’re in my regular rotation.
Like you say, life is too short not to
enjoy your meals.

Hubby was very happy with this dish. I served it with spinach and mushrooms. I used pre-sliced thin chicken cutlets which cut the cook time down and Badia cajun seasoning. I ended up wiping the pan before I did the sauce because the spices were kind of burnt and not in a good way. I will make it again and try to tweak my technique a bit. Definitely will go into the rotation.

Absolutely to die for! I served my spouse and my chicken didn’t make it to the table. I ate it standing at the stove.
