My husband wanted cornbread to go with chilli and I found this recipe as I had some leftover buttermilk that I didn’t know what to do with. I cut back a little on the honey and brown sugar and this turned out amazing and he loved it. I have saved this to my favorites and will make it again! Thank you

Ah-MA-zing! Delicious and fairly forgiving as a recipe. Since this was going to accompany chili I did not want it too sweet (let people add honey or honey butter if they want). I added some drained cream style corn and diced ortega chilis, dropped the honey and buttermilk a teeny bit to allow for the extra moisture from the corn and chilis. I could have kept the honey amount and it would not have been too sweet. LOVE how this recipe gives room for tweaking here and there. I did make a double recipe in a 9 x 13 pan and the center was underbaked at 23 minutes so I dropped the temp to 325 for an extra 12 minutes and that seemed to work. Thank you for a wonderful base recipe!

Turned it into Mexican cornbread by adding cumin, chili powder, Mexican style corn, sharp cheddar cheese and coated my cast iron pan with peanut oil. This was the best cornbread I’ve ever made! Better than my grandma’s.
