I don’t know if I should even comment on this recipe since I altered mine so much, but this was the base recipe I used. OMG it was so yummy!!

I added flax meal to replace 1/5 of the flour, lucuma to replace the sugar, added honey for a tad more natural sweetness, added espresso powder, and folded in 3 whipped egg whites.

The household loved these pancakes. I topped with a dark chocolate ganache, which I just made with dark chocolate and heavy whipping cream over low heat.

These pancakes were fluffy (mainly because of the whipped egg whites), deep chocolate taste with minimal sweetness, and so very filling.

My Husband and I consumed ours with fresh raspberries. We added a raspberry to every bite of pancake to make thr perfect balance of tart and sweet.

I just finished my dinner and had a dessert craving and googled “healthy mug cake” and found this as the top result so why not?… I mean, I’ve tried many recipes but this one is a total WINNER! It’s so tasteful, full of chocolate, melts in your mouth. It’s simply perfect in taste and texture. (I used 1 tbsp chocolate beverage powder instead of sugar and it worked perfectly!). Thank you so much, this is my new everyday favorite recipe!
