Did not use the thickening, added cherry tomatoes. It was great as a side dish. As we were eating, decided to try left overs over pasta! Made a complete meal out of it! Very versatile!

Hi Mary, Yes, you can definitely make this ahead! To keep it fresh and prevent the broccoli from getting mushy, you can fry the bacon, chop the broccoli, and dice the onions a day before. Store them in separate containers in the fridge. Or you can prepare the recipe up until the point where you add the cheese. Let it cool completely, cover the skillet or transfer to a baking dish, and refrigerate. When you’re ready to serve, sprinkle the mozzarella and parmesan on top. Since the dish will be cold, you may need to warm it through in the oven at 350°F (175°C) for about 10–15 minutes before switching to the broiler to bubble the cheese. If you use frozen broccoli for a make-ahead version, make sure it is thawed and squeezed dry so the sauce doesn’t get watery when reheated.

Just remember that the longer the broccoli sits in the sauce, the softer it will get! Xx
