OMG this was the most moist and tasty cornbread I have ever had. I added half a diced jalapeno and loved this!!! Will be making this again!

I have been having trouble with my health since I had gastric bypass in May, so my husband has been preparing meals. I’ve been trying to make one meal a week for him that is slightly different than what he has been fixing. I am trying this tonight because it seems quick and easy, so I might be able to get that done without getting sick. It should be a nice surprise for him. I can’t have it, but I just want him to have a good Southern meal. I’m making Southern lima beans and salmon with lemon garlic sauce with it.

I want to add that I tried to make cornbread when I was younger and it was always a flop. My husband has always made the cornbread.
