A really good base, nice flavors & quite hardy! I added some small steamed cauliflower florets, chopped parsley and more heat…doesn’t really need anything else but I just had these on hand. Thank you for sharing such a simple to put together dish!

Yummy!Before I added the shrimp, I added pineapple chunks and a little bit of pineapple juice. Then I let it simmer to the right thickness. Then for the last couple of minutes added the shrimp and some frozen peas for color

I just made this tonight, and it was a huge hit! The tip about “blooming” the spices made such a difference – the aroma was incredible. I used full-fat coconut milk as you suggested, and the sauce was so rich and creamy. Searing the shrimp first kept them perfectly tender. This curry tastes so authentic, it’s better than takeout!
