I’m not a huge fan of avocados but wanted to give this a try as a healthier meal option and it was delicious!! And I’m surprised how full I feel from eating half an avocado. Recipe is husband-approved as well :). Thanks for sharing!

I didn’t have basil pesto on hand, but did have sun dried tomato pesto, and it was still amazing! Perfect for the warmer weather and fits my keto diet perfectly! I’m able to the mozzarella balls and avocado “minis” at Aldis, which makes it perfect for the one serving variation I make. Anxious to try it when my basil starts growing!
